Creamy Cottage Cheese Veggie Lasagna Bake
  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant. Add mushrooms and cook until golden. Stir in spinach and cook just until wilted. Remove from heat.

  3. In a bowl, mix cottage cheese, egg, half of the mozzarella, and half of the Parmesan until well combined.

  4. Spread a layer of marinara sauce on the bottom of the baking dish. Add half of the veggie mixture, then half of the cottage cheese mixture. Repeat the layers.

  5. Finish with the remaining marinara sauce, mozzarella, and Parmesan. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10–15 minutes, until bubbly and lightly golden.

  6. Let the bake rest for 10 minutes before slicing. Serve warm.
