Heat oil in a large skillet over medium heat.
Add the chopped onion and sauté for 2 minutes.
Add the ground turkey or beef, salt, chili powder, garlic powder, and pepper. Cook until browned.
Stir in the sweet potato cubes, black beans, salsa, and chicken broth.
Bring to a light boil, then cover and simmer on medium-low heat for 20 minutes, or until the sweet potato is tender.
Stir in the chopped spinach and mix well.
Sprinkle shredded cheese on top and broil in the oven for 2 minutes, until the cheese is melted and bubbly.
