Tahini Date Molasses Sweet Potato Muffins
  1. Preheat the oven to 350°F/180°C. Lightly grease & line a muffin tin.

  2. In a large bowl, mix together the sweet potatoes, flour, brown sugar, baking powder, baking soda, cinnamon, clove, black sesame, and salt.

  3. Mix in the egg, oil, and date molasses.

  4. Spoon into the prepared muffin tins, add 1 or 1 ½ tablespoon of tahini on top of each muffin batter and use a wooden skewer to swirl around.

  5. Sprinkle sesame on top of each muffin if desired.

  6. Bake for 25-30 minutes, or until a wooden skewer inserted comes out with few crumbs and the muffins spring back when lightly touched.
