Smack your cucumber with a rolling pin then chop into rough pieces, discarding the ends.
Chuck into a large bowl and sprinkle over 1 tsp salt.
Leave and set aside for 10 minutes and then toss the excess water that settles at the bottom of the bowl.
Mix together your sauce ingredients in a separate bowl.
Pour over the smacked cucumber and add in the extra garnishes if using.
Mix well and serve with an extra drizzle of crispy chilli oil.
