Smacked Cucumber (拍黃瓜)
  1. Smack your cucumber with a rolling pin then chop into rough pieces, discarding the ends.

  2. Chuck into a large bowl and sprinkle over 1 tsp salt.

  3. Leave and set aside for 10 minutes and then toss the excess water that settles at the bottom of the bowl.

  4. Mix together your sauce ingredients in a separate bowl.

  5. Pour over the smacked cucumber and add in the extra garnishes if using.

  6. Mix well and serve with an extra drizzle of crispy chilli oil.
