Roasted Courgette Skewers
  1. Mix everything in a bowl, minus lemon juice.

  2. Thread onto skewers.

  3. Roast in hot oven 210C until softened & burnished, I also gave mine a quick flash under very hot grill to give extra colour / crunch to the breadcrumbs.

  4. Remove from oven & squeeze over with lemon juice, and extra olive oil to serve.
