Low Sugar High Protein Coconut Protein Cups
  1. Melt chocolate chips with coconut oil until smooth.

  2. Spoon a small layer into lined muffin cups and freeze until set.

  3. In a bowl, mix shredded coconut, protein powder, coconut milk and maple syrup until sticky.

  4. Add a little coconut oil if needed to help it come together.

  5. Press coconut mixture over the chocolate base.

  6. Top with remaining melted chocolate and freeze until firm.

  7. Store in the fridge or freezer for an easy high protein low sugar snack whenever you want something sweet.
