Turn your oven on 125 Celsius (convection setting)
Cook your lentils for 10 min in boiling water, then drain the water from the lentils and spread them on a baking sheet and bake for 10 minutes
Meanwhile mix the binder ingredients (tahini, honey, cinnamon, vanilla sugar, sea salt) in a pot over low-medium heat
Pour binder over nuts, oats and baked lentils - mix well
Spread evenly on a baking sheet and press down
Bake for 24 minutes in total (or until golden) and flip halfway through (after 12 minutes)
Cool completely before breaking into chunks
