Cook some rice.
Mix the chicken marinade ingredients and set aside ¼ cup if the marinade for basting the chicken.
Marinade the chicken thighs in listed ingredients.
Mix the salad dressing ingredients
Mix spinach, tomato, onion and set aside
Cook and sear the chicken in 1-2 tablespoons oh olive oil for 8-10 minutes. Cook undisturbed for first 2-3 minutes and then flip. Get a nice sear on the chicken.
Put chicken on a cutting board to rest. Brush on the marinade and chop into slices.
Serve chicken over the rice with a salad.
