Boil chicken legs at least until meat falls off the bone. Ideally cook until bones are soft enough to blend into mixture.
Add greens and cook until reduced.
Turn off heat.
Immediately add organ meat and eggs so they are cooked, but not overcooked.
With immersion blender, thoroughly blend ingredients.
Add optional rice and mix thoroughly.
Pour into serving sized molds and freeze OR can. If canning be sure to follow protocol for canning meats.
