Peppermint Crunch Cookies
  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Whisk the flour, baking soda, baking powder, and salt together in a small bowl and set it aside.

  3. In a large mixing bowl, cream together the softened butter and sugars until well-combined and fluffy.

  4. Mix in the egg and peppermint extract.

  5. Gradually mix the flour mixture into the wet ingredients until the cookie dough comes together.

  6. Mix in the oats, chocolate, and crushed peppermint until well incorporated.

  7. Transfer the dough to the fridge and let it chill for 15 minutes.

  8. Line a cookie sheet with parchment paper.

  9. Use a tablespoon-sized cookie scoop to scoop balls of dough, flatten gently, and place them on the prepared baking sheet.

  10. Bake the cookies for 10 to 12 minutes until the edges turn golden.

  11. Let the cookies sit on the hot baking sheet for five minutes before transferring them to a wire rack to cool completely.
