In a skillet over medium heat, melt butter.
Stir in onions and garlic. Once it’s translucent, add sun dried tomatoes, tomato paste and the spices.
Add in the uncooked orzo and stir until fragrant.
Stir in the broth and heavy cream. Let it simmer for few minutes add spinach and Parmesan.
Let it simmer for another 5 minutes and stir continuously until you reach a creamy consistency.
Once spinach is wilted and orzo is dente, turn the heat off.
Grate fresh Parmesan and add choice of your protein (fish or chicken).
