Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Prepare the carrots by cutting them into even-sized sticks or leaving them whole if they are on the thinner side. Place the prepared carrots on a baking sheet.
Drizzle the carrots with the olive oil and season them with salt and pepper. Toss them until they are well-coated in the oil and seasoning.
Place the baking sheet in the preheated oven and roast the carrots for about 20-25 minutes. They should become tender and start to turn a golden brown at the edges.
Remove the baking sheet from the oven and drizzle the honey over the roasted carrots while they are still hot. Toss them gently to ensure all the carrots are nicely coated with the honey.
Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the honey has caramelized slightly and the carrots are fully tender and glazed.
Serve immediately, garnished with fresh parsley if desired.
