  1. Add lemon peel, lemon juice, and sliced ginger to a saucepan with 2 cups water.

  2. Simmer gently until the liquid is reduced by half.

  3. Strain, measure, and combine the warm (not hot) decoction with an equal amount of raw honey.

  4. Stir until fully blended and pour into a clean 16 oz bottle.
