Marinate Chicken
Marinate chicken in buttermilk, pickle juice, hot sauce, egg, garlic powder, onion powder, smoked paprika, cayenne, and MSG for 2 hours (or overnight).
Prepare Breading
Mix flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne, and MSG.
Mix 2–4 tbsp marinade into flour mixture.
Fry Chicken
Double dredge chicken: marinade → flour mixture → marinade → flour mixture. Press firmly.
Fry at 350°F for 6–8 minutes, until golden brown and internal temperature reaches 165°F.
Make Hot Oil
Mix hot frying oil with cayenne, brown sugar, smoked paprika, garlic powder, onion powder, chili powder, and salt.
Brush hot oil onto fried chicken.
Dip chicken into Dave’s sauce.
