10-minute Lime Cracker Pie
  1. Combine milk and heavy cream in a large bowl.

  2. Add lime juice and whisk until thickened, about 1 minute.

  3. Spread 1 cup filling on bottom of deep-dish pie plate, 11-inch oval casserole, or 2 shallow pie plates.

  4. Top with single layer of Ritz crackers.

  5. Repeat, alternating layers of filling and crackers until pie plate is full (finish with a layer of filling).

  6. Sprinkle with grated lime zest.

  7. Refrigerate at least 2 hours or up to overnight.

  8. Serve.
