Baked Cod
  1. Arrange a rack in center of oven; preheat to 400°. Pat cod with paper towels until dry; season all over with salt and pepper.

  2. In a 13" x 9" baking dish, combine lemon, garlic, thyme, tomatoes, oil, and red pepper flakes. Toss to coat and spread in an even layer. Nestle cod pieces into baking dish.

  3. Bake cod until opaque and fish easily flakes with a fork, 25 to 30 minutes, depending on thickness of fillets.

  4. Top with parsley. Serve with lemon wedges alongside. Spoon pan sauce over.
