Add 80g sweetcorn to a large bowl with 2 chopped spring onions, 30g cubed halloumi, 30g self raising flour, a pinch each of salt & pepper, plus any other herbs/seasonings of your choice - I added ½ tsp smoked paprika. Give it a stir.
Crack in 1 large egg, then mix until combined.
Heat a large, non-stick frying pan over a medium heat with a little olive oil/butter, then once hot, spoon the batter into the pan in an even layer.
Cook for 3-4 minuts or until tiny bubbles are starting to form, then flip & cook for a further few minutes.
Serve the fritter with toppings of your choice & enjoy!
