Baked Greek Chicken with Lemon Potatoes
  1. Preheat oven to 400F

  2. Combine potatoes in a bowl with 2 tbls olive oil, 1 tsp oregano, 1 tsp salt and ½ tsp pepper and garlic. Stir to combine. Set aside.

  3. Whisk lemon juice, orange juice, mustard, ½ tsp dry oregano, pinch of salt and pepper together. Set aside.

  4. Arrange chicken thighs in a roasting pan large enough to hold the potatoes as well. Season with salt, pepper and a healthy sprinkling of dry oregano.

  5. Arrange the potatoes around the chicken.

  6. Pour the marinade over the chicken.

  7. Place the oregano sprigs on top.

  8. Cover tightly with foil and bake for one hour.

  9. Remove the foil and bake for 30 minutes more.

  10. If you want it extra crispy, broil it for a few minutes.
