In a large pot over medium heat, add Italian sausage and cook for 5-7 until browned.
Add onion, red bell pepper, green bell pepper and garlic and cook for 3-5 minutes until fork tender.
Add lemon juice, tomatoes, coconut milk, chicken broth and pasta into the pot. Bring it to a boil, then turn down the heat and simmer for 10 minutes.
Once the pasta is cooked through, add the kale and cook for another 3 mins. If your pot has a lid, cover to help the kale wilt. If not, push down with the back of a wooden spoon until the kale has shrunk to half its original volume.
Serve with Parmesan cheese grated on top and ENJOY!
