Street Corn Chicken Protein Bowl
  1. Season chicken breast with chili powder, smoked paprika, garlic powder, cumin, salt and pepper

  2. Place seasoned chicken into an air fryer with light cooking spray and air fry until golden brown

  3. Cook 2 cups jasmine rice

  4. In a bowl, combine corn, ½ cup non-fat Greek yogurt, 2 tbsp light mayo, juice of 1 lime, cotija or reduced-fat feta, ½ tsp chili powder, and salt to create the street corn mix

  5. Combine ½ cup non-fat Greek yogurt, 1 tbsp light mayo, juice of ½ lime, 1 small garlic clove, handful fresh cilantro, and splash of water to create the creamy cilantro drizzle

  6. Divide cooked rice into four equal servings

  7. Top each serving with cooked chicken and street corn mix

  8. Drizzle with creamy cilantro sauce

  9. Garnish with fresh cilantro, lime wedges, and avocado slices if desired
