Create the paste: Mix together the paste ingredients in a small bowl until a smooth paste forms.
In a large mixing bowl, cream together the cold butter and granulated sugar until light and fluffy.
Add eggs and butter vanilla emulsion, mixing well after each addition.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture and mix until the dough comes together.
Divide the dough in half.
Roll out one half on a floured surface to about ¼ inch thickness.
Spread a thin layer of the cinnamon paste over the dough, then fold or roll as desired to incorporate the swirl.
Chill the dough in the refrigerator for 15–30 minutes to firm up.
Cut into shapes and place on a baking sheet lined with parchment paper.
Bake at 350°F (177°C) for 9–11 minutes or until the edges are just beginning to turn golden.
Let cool completely before decorating with royal icing.
