Add avocado oil, seasonings, chipotle paste, and lime juice to boneless skinless chicken thighs and mix well with your hands
Bake the seasoned chicken in the oven at 200°C for 20 Minutes
Dice potatoes into cubes and add to a bowl with the same seasonings and avocado oil
Mix potatoes well to coat
Air fry the potatoes at 190°C for 20-25 minutes
Chop the cooked chicken into cubes
Assemble bowls with crispy potatoes, chicken, grated cheese, guacamole, and Greek yogurt
Drizzle with sriracha and serve
