  1. Mix & Knead: Combine flour, milk powder, yeast, salt, and sugar in a large bowl. Add warm water and oil. Mix until a dough forms. Knead for 8-10 minutes by hand or 5 minutes in a stand mixer until the dough is smooth and elastic.

  2. First Rise: Place dough in a lightly greased bowl, cover with a tea towel, and let it rise in a warm spot for 45-75 minutes, or until doubled in size.

  3. Shape & Second Rise: Punch down the dough and knead for 1-2 minutes to remove air bubbles. Shape into 2 loaves (weigh the dough to get it equal) and place into 2 greased loaf tinS. Cover and let it rise again for 30-45 minutes until the dough is about 1cm above the top of the tin.

  4. Bake: Preheat oven to 392F. Bake for 25-30 minutes until golden brown and the loaf sounds hollow when tapped on the bottom.

  5. Cool: Turn out immediately onto a wire rack to cool to prevent a soggy crust.
