  1. Heat half the oil in a large casserole on a high heat. Brown minced beef, season, brown for 5 minutes.

  2. Add rest of oil and butter, cook onions and celery for 5 minutes. Add apple, garlic, spices, oregano, green chilli, chipotle, cook 5-10 minutes.

  3. Add kidney beans, chickpeas, tomatoes, browned beef, stock, wine. Simmer 25-30 minutes.

  4. Reheat, serve on rice with soured cream, coriander, and avocado salsa.

  5. For avocado salsa, mash avocados with lime juice, chilli, shallot, coriander stalks, and salt.
