Ground Cherry Muffins
  1. Preheat oven to 400o.

  2. Combine flour, sugar, baking powder, nutmeg and salt in a large mixing bowl.

  3. In a small bowl, combine egg, milk and oil.

  4. Create a well in the center of the dry ingredients and pour in the wet ingredients.

  5. Stir everything together until well incorporated.

  6. Add in the ground cherries.

  7. Line a muffin tin with paper liners or lightly grease with a cooking spray.

  8. Fill each muffin tin ¾ full with the batter and back in the oven for about 20 minutes, or until golden brown.
