Asian Noodle Salad
  1. Cook the noodles according to the package directions.

  2. While the noodles are cooking, combine the spinach, carrot, pineapple, cilantro and green onion in a large salad bowl.

  3. In a blender, combine the peanuts, water, lime juice, soy sauce, brown sugar, canola oil, sesame oil, ground ginger and red pepper flakes. Cover and process until blended.

  4. Once the noodles are done, drain them, and rinse well in cold water. Drain again.

  5. Add the drained noodles to the bowl with the vegetables. Drizzle with dressing and toss to coat.

  6. If desired, garnish with peanuts and additional lime juice.
