Frances’s Pork Chop Casserole
  1. Preheat the oven to 350°F. Spray a 9x9" glass casserole with a non-stick cooking spray, such as Pam. Cover the bottom of the casserole with a thin layer of instant rice. Slice both the onion and the tomato into 4 thick slices.

  2. Heat a skillet on medium, then add a small amount of oil, and brown the pork chops on both sides. Place the pork chops on the rice in the casserole dish. Salt and pepper the chops and sprinkle with oregano. Top each chop with a slice of onion and a slice of tomato, sprinkling each layer with oregano. Pour the consommé over all, and cover with aluminum foil.

  3. Bake in the preheated 350°F oven for 45 minutes.
