Boil and roughly mash 2 medium potatoes
Grate 300g zucchini and dice ½ onion
Mix 350ml water with 2 tbsp vinegar
Combine mashed potatoes, grated zucchini, and diced onion
Add 450g self-raising flour to the mixture
Add the vinegar-water mixture to combine
Season with 2 tsp fresh rosemary or thyme, ½ tsp nutmeg, 2 tsp paprika, and 2 tsp salt
Add optional extras such as cheddar cheese, feta, nutritional yeast flakes, or frozen corn if desired
Bake in muffin tins until golden
