Courgette, Lemon And Feta Pasta Salad
  1. Cook the pasta according to packet instructions, adding the petits pois to cook for the last 3 minutes. Drain and leave to cool.

  2. Using a mandoline or a sharp knife, finely slice the courgette. Add to a large bowl along with the now-cooled pasta and petits pois. Crumble the feta over everything and add the mint.

  3. Whisk together your dressing ingredients and pour over the top, then toss everything together. Divide between two bowls to eat straight away, or keep in the fridge for lunches on the go.
