Pour milk into a saucepan and sprinkle gelatin, let it sit until it's all absorbed
Turn onto low heat and stir until fully dissolved and simmering
Pour into a stand mixer with whisk attachment and begin whisking
After 5 minutes, add in protein powder and maple syrup and cocoa if using
Whip until it's light and fluffy then transfer to a greased pan
Let set in the fridge for about five hours
Once set, cut into bars
Melt chocolate chips and coconut oil together
Dip each marshmallow bar into the chocolate to coat it
Place on parchment paper and let set in the fridge
