Add the coffee, cocoa powder and boiling water to a large bowl. Mix and allow to cool to room temp.
Add in the oil, buttermilk, sugar and salt. Add the eggs one at a time, mixing for 30 seconds in between each.
Fold in the baking soda and plain flour.
Pour evenly into two 20cm cake tins (line the bottoms with baking paper).
Bake for ~30 minutes at 170°C or until a skewer comes out clean.
Allow to cool (preferably in the tin) then slice off the tops and then slice each cake in 2. Keep the tops to use for decorating. This is much easier with a wire cake slicer but you can also use a serrated knife.
Heat the sugar in a pan on a medium to slow heat until it has fully melted and is a rich amber colour. Try not to stir but you can use a wooden spoon or spatula to gentle pull the melted into the centre.
Remove from the heat and whisk in the cream, start VERY slowly at first. add splash at a time to avoid it from seizing. Once all the cream is incorporated add in the salt and butter. Once the butter has melted return to the heat with a candy thermometer. Watch and stir regularly until the mixture reaches 116°C.
Pour the caramel over the cornflake and stir to completely coat.
Push the cornflakes into a lined baking try (be careful as this is HOT) and allow to cool completely
Once cool cut out 3 circles the same size as your cake tin. (You may need to make 1 circle out of 2 halves)
Melt the butter and chocolate in the microwave in 30 second intervals mixing in between each reheat.
Once fully melted add the cream and mix until glossy.
Allow to cool to room temp (pop into the fridge for ~30 minutes)
Whisk on high speed for about 1 minute until fluffy.
