Preheat the oven to 350°F and line a sheet pan with parchment paper.
Peel and chop the 2 Large sweet potatoes into ¼ inch cubes. Place them on the sheet pan, drizzle 1 tablespoon of the 2 tablespoons olive oil, Salt and pepper, and 1 teaspoon cinnamon.
Using your hands, toss to combine. Bake for 18-20 minutes or until crispy and cooked through.
Meanwhile, cook the beef. In a pan, add olive oil and sear the 1 pound lean ground beef until it is no longer pink. About 2-3 minutes. Then add the 1.3 ounces taco seasoning and 1 tablespoon tomato paste.
Cook for another 2 minutes until the flavors meld. Add a tablespoon of the 3 tablespoons hot honey, and mix again. If the beef is too dry to your liking, you can add a bit of water or broth. (depends on how lean the beef is).
Assemble the Bowl. Add the roasted sweet potatoes, seasoned ground beef, 1 large avocado (divided equally), and 2 cups Low-fat cottage cheese (½ cup in each bowl.
Drizzle with more hot honey, and garnish with Red chili flakes if desired. Serve and enjoy.
