One-pot Braised Lentils
  1. In a large pan, lightly brown the shallots and garlic over medium heat.

  2. Add the broccolini, stirring regularly for 3 minutes to brown. Add ¼ cup of water, cover and cook for a further 3 minutes. Remove the broccolini and set aside.

  3. Add the lentils, chicken stock and fresh herbs. Allow to simmer for 10 minutes on low heat, until the broth has thickened slightly. Top with lemon zest & fresh herbs to finish.

  4. To serve, top with broccolini, a heavy dollop of yoghurt, a fried egg and chilli oil.
