Crispy Mushroom Parmi Steaks
  1. If making tomato sauce from scratch: heat olive oil over medium heat and add onions, cook for 5 minutes

  2. Add diced tomatoes, vegetable broth, tomato paste, garlic powder, paprika, basil and season to taste

  3. Bring to a boil, reduce heat and simmer for 10 minutes until sauce thickens

  4. Preheat air fryer to 200C

  5. Remove stems from mushrooms and chop them

  6. In a bowl combine milk, flour, cornstarch and apple cider vinegar until smooth

  7. In a separate bowl combine bread crumbs, seasonings and Parmesan/nutritional yeast

  8. Dip each mushroom into milk mixture and roll in bread crumbs on both sides

  9. Arrange steaks in air fryer basket and cook for 10 minutes

  10. Meanwhile pan fry chopped mushroom stems until cooked

  11. Remove mushrooms from air fryer

  12. Top each steak with tomato sauce, cooked mushroom stems and sprinkle with cheese

  13. Return to air fryer for another 10 minutes until cheese is melted and mushrooms are cooked through

  14. Serve right away and enjoy
