  1. Combine the tofu, tomato sauce, olive oil, and liquid smoke in a food processor and blend until smooth.

  2. In a large bowl, mix together the vital wheat gluten, fennel seeds, paprika, red pepper flakes, salt, onion powder, garlic powder, and black pepper.

  3. Add the tofu mixture to the dry ingredients and knead for 2-3 minutes until a dough forms.

  4. Divide the dough into 4 equal pieces and roll each piece into a log shape.

  5. Wrap each log in parchment paper or foil and steam for 45 minutes.

  6. Allow the logs to cool completely before slicing and using as desired.
