In a large bowl, whisk together the flour, baking powder, and salt.
Add the sugar and shredded coconut, mixing until combined.
In another bowl, combine the crushed pineapple, melted butter, beaten eggs, vanilla extract, and coconut milk (if using).
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
