In a bowl, add the chicken. Toss with the olive oil, spices, and yogurt. Mix well and set aside.
Next, heat a large pan over medium-high heat and add a drizzle of olive oil.
Once hot, add the chicken. You may need to work in batches. Cook for 7 to 8 mins per side until cooked through. Remove from the pan and set aside.
Reduce the heat to medium-low. Add the oil to the same pan and add the onions. Cook, stirring often, until translucent, then add in the garlic & spices, stirring for 1 to 2 minutes more.
Add the rice, broth and lemon juice. Bring to a gentle boil then cover and reduce heat to low. Simmer for 20 minutes, then remove cover and fluff the rice.
Mix the salad ingredients in one bowl.
Cut the chicken then add it on top of the rice along with the salad and tzatziki (if using). Serve and enjoy!
