Protein Berry Oatmeal Bake
  1. Preheat oven to 350.

  2. Add 2 cups rolled oats & ¼ cup vanilla protein powder to a large mixing bowl and set aside.

  3. In a separate bowl, add all the eggs, almond milk, vanilla extract, lemon zest, and maple syrup. Mix well.

  4. Once combined add in your wet mixture to the dry mixture along with 2 large ripe bananas (smashed) and mix.

  5. Then add in 1 cup frozen berries and mix.

  6. Add to a greased baking pan and top with fresh berries and chopped pecans.

  7. Bake for about 35-45 min. The timing of the bake will depend on how large the pan is.

  8. Once it’s baked you can let it cool, then cut into 6 large pieces.

  9. Top with plain Greek yogurt for some extra protein! Store leftovers in the fridge to have for breakfast the next few days!
