Preheat oven to 350.
Add 2 cups rolled oats & ¼ cup vanilla protein powder to a large mixing bowl and set aside.
In a separate bowl, add all the eggs, almond milk, vanilla extract, lemon zest, and maple syrup. Mix well.
Once combined add in your wet mixture to the dry mixture along with 2 large ripe bananas (smashed) and mix.
Then add in 1 cup frozen berries and mix.
Add to a greased baking pan and top with fresh berries and chopped pecans.
Bake for about 35-45 min. The timing of the bake will depend on how large the pan is.
Once it’s baked you can let it cool, then cut into 6 large pieces.
Top with plain Greek yogurt for some extra protein! Store leftovers in the fridge to have for breakfast the next few days!
