Blueberry Bagels
  1. Prepare the Dough: In a small bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes until frothy. In a large bowl, mix flour and salt. Pour in the yeast mixture and knead for 8-10 minutes until a smooth dough forms. Gently knead in the blueberries. The dough will turn slightly blue. Cover and let rise for 1 hour.

  2. Shape the Bagels: Preheat oven to 425°F (220°C). Divide the dough into 8 equal portions. Shape each piece into a ball, then poke a hole in the center and stretch into a bagel shape. Let the shaped bagels rest for 10 minutes.

  3. Boil the Bagels: Bring a large pot of water to a boil and add 1 tbsp honey. Boil the bagels for 1 minute on each side.

  4. Bake: Place boiled bagels on a baking sheet lined with parchment paper. Bake for 20-25 minutes, until golden brown.
