Preheat oven to 375°F and line a baking sheet with parchment paper.
Wash the sweet potatoes really well, then dry them thoroughly.
Trim off the ends, then cut each sweet potato in half lengthwise.
Rub the cut sides with olive oil, salt, pepper, garlic powder, and smoked paprika.
Place cut-side down on the parchment-lined baking sheet.
Roast at 375°F for 1 hour.
Let them sit on the pan for 10 minutes before lifting.
Carefully remove with a thin spatula to keep that caramelized bottom intact.
