Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, mix peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla until completely smooth.
Add oat flour, baking powder, and salt to your wet mixture. Stir gently until just combined, then fold in those mini chocolate chips.
Using a cookie scoop or tablespoon, drop rounded portions of dough onto your prepared baking sheet. Gently press down to slightly flatten each cookie.
Bake for 8-10 minutes until the edges are just turning golden but the centers still look soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
