Finely chop your dates (with ripe medjool dates, this should become almost paste like) and add them to the ramekin along with the hot water and baking soda. Microwave for 30 seconds.
Add 1 tbsp butter, let the butter melt and mix together.
Then add the brown sugar (if you don't want this as sweet, you could omit), flour, baking powder and oil. Mix and then microwave for around 1 minute. I checked mine after 50 seconds and it needed slightly longer. A soft, DARK sponge should form.
Don't worry if the sides of the ramekin are messy/ foamy, you can wipe this off. Set aside and wipe any excess off the sides of the ramekin.
In a microwaveable jug, add the sauce ingredients and microwave for 30-40 seconds, until the sugar is melted. Mix together to form a butterscotch type sauce.
Add your ice cream/ whipped cream before pouring the sauce on top. Alternatively, pour the sauce, then add the ice cream.
Top with pecans, enjoy!
