  1. Mix dry ingredients for the biscuits in a large bowl.

  2. Add chunks of cold butter to the dry ingredients. Cut butter into flour. I usually use my hands to massage the flour and butter together until it starts to form a ball. You can also use a food processor or pastry blender.

  3. Add sourdough starter, sugar, milk or buttermilk.

  4. Stir until nicely incorporated and creates a dough.

  5. Roll out dough onto a lightly floured surface and cut biscuits.

  6. Place onto a parchment paper lined baking sheet.

  7. Bake biscuits in a 400 degree oven for 14 -20 minutes.

  8. While the biscuits are baking, brown sausage over medium heat.

  9. Reduce the heat to medium-low. Sprinkle on the flour and stir so that the sausage grease soaks it all up.

  10. Cook for a few more minutes.

  11. Pour in the milk and stir constantly.

  12. Cook the gravy, stirring frequently, until it thickens. This takes about 5-10 minutes.

  13. Add in the salt and pepper and stir. If the gravy gets too thick, add a little more milk.
