Smashed Bean Burger
  1. Roast onion and mushrooms on high heat until nicely charred (takes about 10mins).

  2. Pulse black beans or kidney beans with the mushrooms and onion.

  3. Add breadcrumbs, salt, paprika, cumin, garlic powder, and chili powder. Knead until it's a firm mix.

  4. Take out a good handful of the mix, roll into a ball, and place in a pan with hot oil.

  5. Press down the patty and fry each side for 2-3mins.

  6. For the burger sauce, mix vegan mayonnaise, ketchup, chopped pickles, sugar, and white vinegar.

  7. Assemble the burger with the buns, caramelised leek, and the smashed bean patty with the burger sauce.
