Preheat oven to 275°
Add pumpkin seeds to small bowl and mix with maple syrup and salt
Add half the seeds to a separate bowl and mix one batch with chili powder and the other with cinnamon
Press onto a parchment lined baking sheet into a single layer but make sure they are all still touching
Bake for 40 minutes
Allow to cool for 20 minutes so they dry and stick together
Break into small clusters and store in an airtight container
Enjoy on salads, yogurt bowls, oatmeal, pancakes or on their own
