Add 1 ½ to 2 lbs of beef stew meat (or boneless chuck roast, cut up) to your slow cooker.
Add 1 cup beef broth, ½ cup soy sauce, ⅓ cup brown sugar, 1 tbsp oil, and 3 minced garlic cloves. Pour over the beef.
Cover and cook on low for about 5 hours.
In a small bowl, whisk 3 tbsp cornstarch with ¼ cup water. Add the mixture to the slow cooker, along with your broccoli and chopped carrots.
Cook on high for 15-30 minutes, or until the sauce thickens and the veggies are tender.
