Nutrient-rich Oatmeal Cups
  1. Bring the water and salt to a boil. Stir in the oats and reduce the heat to low-medium. Cook for about 10 minutes, stirring occasionally.

  2. Once the oatmeal is cooked, whisk the eggs in a small bowl. Slowly incorporate the warm oatmeal into the bowl of eggs while stirring constantly to avoid curdling your eggs. Do this with about 1 cup of oatmeal, then combine the egg mixture into the pot of oatmeal and cook over the stove for 3-4 minutes while stirring.

  3. Remove from the heat and stir in the vanilla and any spices you're adding.

  4. Transfer to Souper Cube mold and let it cool before transferring to the freezer.

  5. Once they are completely frozen, transfer them to a plastic bag or other storage container.

  6. To enjoy, just reheat the oatmeal and add any toppings you like, like greek yogurt, milk, berries or raw honey.
