Bring 4 cups of water to a boil. Generously salt and stir in grits. Lower heat to medium and simmer for about 30 min, stirring frequently, until thick and creamy. Stir in cheese and butter until fully incorporated. Adjust seasonings.
Mix together shrimp, lemon juice, smoked paprika, salt, cumin, pepper, cayenne and garlic.
Heat oil in saute pan over medium-high heat. Add sausage and brown 2-3 minutes.
Add shrimp and cook 3 min each side. Adjust seasonings. Deglaze pan with chicken stock and cover 1 min.
Remove from heat and ladle on top of grits. Garnish with sliced green onions.
