Jamaican Patty
  1. Whisk flour, baking powder, salt, curry powder, bijol, and sugar in a large bowl

  2. Cut in cold butter/shortening until crumbly with pea-sized bits visible

  3. Whisk together ice water, vinegar, and ¼ beaten egg, then add gradually to flour mix until dough just comes together without overworking

  4. Wrap dough in plastic and chill for 30 minutes

  5. Roll dough into a rectangle, fold into thirds like a letter, then chill for 15 minutes

  6. Repeat the folding and chilling process 2–3 times for extra layers

  7. Chill dough for at least 30 minutes before using

  8. Brown ground beef in oil with onion, scallions, and garlic

  9. Add Scotch bonnet pepper, thyme, paprika, black pepper, garlic powder, onion powder, Caribbean spice, roasted garlic seasoning, soy sauce, ketchup, and browning

  10. Stir in breadcrumbs soaked in water and 1 cup water, then simmer until filling is cooked and cooled

  11. Roll dough to ⅛-inch thickness and cut 6-inch circles

  12. Place 2–3 Tbsp cooled filling in the center of each circle

  13. Brush edges with water, fold, and press to seal, then crimp edges with a fork

  14. Arrange patties on parchment-lined baking sheet and brush tops with egg wash

  15. Bake at 375°F for 25–30 minutes until golden, crisp, and flaky
