Honey Cake

Makes 1 loaf cake (tin size 22 x 12cm)

Ingredients:

    Method:

  1. Beat honey and softened butter together till pale.

  2. Add the eggs, milk, baking powder and a tablespoon of flour then beat together.

  3. Add the rest of the flours and mix well with a spatula.

  4. Pour into a lined loaf tin, cover with slivered almonds, and bake in preheated oven at 180c for 25-30 minutes till golden.

  5. Let it cool a little in the tin, while that's happening, beat 200g butter with 100g honey and a pinch of salt.

  6. Pop into a dish and leave at room temperature, you want it soft and spreadable!!

  7. Remove the cake from the tin when still a little warm, dust with icing sugar then slice.

  8. Spread with a generous amount of honey butter and drizzle a little honey on top.
